Sweet Potato Hash

You have read by now we try our hardest to eat Paleo. I think we do a pretty good job, until someone craves ice cream (Tim) or someone doesn't want to do dishes that night (Tim) or someone doesn't want to cook (Tim). When we are stumped on what side we want we always resort to sweet potatoes and almost always go to this super delicious recipe. 

Sweet Potato Hash
2 lg Sweet Potatoes, cubed
1 small Onion, chopped
2 tbsp Olive Oil
1 tsp Butter
4 Garlic Cloves, chopped
1 tsp Thyme
1/2 tsp. Sea Salt
1/4 tsp. Pepper
2 tsp. Parsley

Heat the oil and butter in a skillet, add potatoes and onions and saute, stirring until the potatoes have almost reached preferred color. Add the garlic, thyme, parsley, salt and pepper then continue to cook for another 5 minutes or so. 

Simple as that. Carter and Oliver love when we cook sweet potatoes this way and always clean their plates.
