Cauliflower Fried Rice and Chicken

If you are clean eating and you crave the sodium [food] from the local Chinese restaurant you need to try this recipe. We make it every time we find ourselves craving the MSG. First things first... we are still trying to perfect our rice therefore we haven't put much thought into the chicken except for this... cut Chicken Breast into strips and marinade over night in teriyaki sauce. When you are ready to make it put it in a skillet and cook it on medium until it is finished. Once your rice is finished you just toss it in. Maybe next time we will really do something with the chicken but this time we weren't too concerned about it. Here is what really matters and what the whole family inhales...

CAULIFLOWER FRIED RICE
- a whole head of Cauliflower (grated with a cheese grader)
- 1 c. carrots, thinly sliced
- 1c. frozen peas
- 3 garlic cloves
- 1 small onion
- 2 large eggs (scrambled)
- 3-4 tbsp Soy Sauce (we always start with three and end up putting 4 because we don't use salt)
- olive oil lightly cover bottom of skillet

In a large skillet saute the garlic and onion in olive oil on medium heat until the onions are transparent. Then add the carrots and peas and cook until the carrots are tender. Next stir in the egg, cauliflower and soy sauce and saute for another 6 minutes then stir in your chicken and you have a dish of awesome!
