Friday's Recipe (A Vasquez Gathering Must) (Pickle Roll-Ups)

So there is one appetizer/dish that is a musts have at the Vasquez gathering's. I have actually witnesses very upset family members when the found out the appetizer was either not brought to that gathering or they arrived to late to snag one or two. In my family they are a big deal and people are normally mauling the person that is carrying around the tray serving them, no we don't have butlers or waiters at our gatherings, just the lucky family member that found them (normally hidden) in the fridge and decided to break them out. This recipe is great to get the family involved so as I give you the steps I am going to give it to you by person's job. So with out further ado......

Pickle Roll-Ups
3-4 jars Armour Dried Beef
1 jar Dill Pickles (drained and quartered)
1 8oz block Cream Cheese (at room temp. for easy spreading)
paring knife
cutting board
butter knife

Adult #1: Using the butter knife spread the cream cheese onto the dried beef.

Adult #2: Using the paring knife quarter the pickles

Child #1-??: Place the pickle on the edge of the cream cheese side of the dried beef and roll. Place into a storage container.

Adults: Refrigerate before serving.

Makes about 30-45 roll-ups (depending on how many jars of beef you buy)



See easy as that... FYI... 8 jars of dried beef, 2.5 jars of pickles, 1 tub of cream cheese will fill a 9x13 container. They were laid in 3 rows and 3 layers. ENJOY!
